Olive Oil Cookies


2 cups flour

1 tsp baking soda

1 tsp salt

1 cup white sugar

1 cup brown sugar

¼ cup Serjella Virgin Olive Oil

2 eggs

1 tsp vanilla extract

1 tbsp milk

1 cup chocolate chips


  • Preheat oven to 190°C.
  • In a large bowl, mix flour with baking soda and salt. Set it aside.
  • In another bowl, combine white and brown sugar with olive oil. Beat with a hand mixer.
  • Add eggs and vanilla. Continue mixing until well combined.
  • Add flour mixture gradually and continue mixing.
  • Add the milk to make the dough a bit firmer. Cover and refrigerate for 15 minutes.
  • Using a scoop or spoon, make small balls and put them in on a tray lined with wax paper.
  • Press the cookie dough balls gently to flatten them a little.
  • Bake for 10 minutes. Let it cool.
