Olive Oil Chocolate Cake


¼ cup unsweetened cocoa

1 cup Serjella Virgin Olive Oil

2 tsp vanilla extract

1 cup flour

¼ tsp salt

1 cup sugar

3 eggs

½ tsp baking powder


  • Preheat oven to 160°C.
  • Dissolve 2 tablespoons of unsweetened cocoa in ¼ cup of warm water.
  • Add the vanilla extract and mix to combine.
  • In a big bowl, sift the flour with salt and baking powder. Set aside.
  • In another bowl, beat the eggs with sugar and olive oil. Whisk to combine.
  • Add cocoa mixture and mix well.
  • Add flour mixture gradually, mixing through until you have a thick homogeneous batter.
  • Pour the batter in a cake pan.
  • Bake for 50 minutes. Let it cool then cut and serve.
