
Olive Oil Chocolate Cake
Ingredients
¼ cup unsweetened cocoa
1 cup Serjella Virgin Olive Oil
2 tsp vanilla extract
1 cup flour
¼ tsp salt
1 cup sugar
3 eggs
½ tsp baking powder
Preparation
- Preheat oven to 160°C.
- Dissolve 2 tablespoons of unsweetened cocoa in ¼ cup of warm water.
- Add the vanilla extract and mix to combine.
- In a big bowl, sift the flour with salt and baking powder. Set aside.
- In another bowl, beat the eggs with sugar and olive oil. Whisk to combine.
- Add cocoa mixture and mix well.
- Add flour mixture gradually, mixing through until you have a thick homogeneous batter.
- Pour the batter in a cake pan.
- Bake for 50 minutes. Let it cool then cut and serve.
