Olive Oil Lemon Cake


½ cup Serjella Virgin Olive Oil

Zest of 1 lemon

2 tbsp lemon juice

1 cup flour

¼ tsp salt

1 cup sugar

4 eggs

½ tsp baking powder


  • Preheat oven to 170°C.
  • Using a hand mixer, beat the eggs in a bowl with sugar, olive oil and lemon juice. Whisk to combine.
  • Sift the flour in a big bowl.
  • Add baking powder, salt and lemon zest. Mix to combine.
  • Pour in the egg mixture and mix all together using a spatula.
  • Brush a round cake tray with olive oil and pour in the cake batter.
  • Bake for 45 minutes. Let it cool then cut and serve.
