
Cheese & Zaatar Manakeesh
Ingredients
3 cups flour
1 tsp salt
1 tbsp sugar
1 tbsp instant yeast
1 cup Serjella Extra Virgin Olive Oil
1 cup warm water
1 cup zaatar
250 g akawi cheese, shredded
250 g mozzarella cheese, shredded
Preparation
- Sift the flour over a large bowl. Add sugar, salt and yeast. Mix to combine.
- Add ½ cup of olive oil and 1 cup of warm water. Mix well with your hands or with a spoon until you get a soft, homogeneous mixture.
- Brush the dough with olive oil, cover it with a cloth and let it rest for 2 hours.
- In a small bowl, mix zaatar with ¼ cup of olive oil.
- In another bowl, mix akawi and mozzarella cheese.
- Divide the dough into 3-4 pieces. Roll each one on a flat surface sprinkled with flour until you form a big circle.
- Using a medium size round cutter or bowl, cut the dough into a medium size circle. Repeat the process to get the desired number of pies.
- Spread the olive oil and zaatar mixture on top of some pies and the cheese mixture on the others.
- Bake in the preheated oven for 10 minutes. Serve.
