Roasted Potatoes with Herbs


1 kg medium potatoes

½ cup Serjella Extra Virgin Olive Oil

2 sprigs fresh rosemary

1 bulb garlic, cut into cloves

½ cup zaatar

¼ cup red vinegar


  • Preheat oven at 190°C.
  • Wash the potatoes properly and then cut them into halves.
  • Add the potato to a pot filled with boiling water. Add a pinch of salt, cover the pot, and boil the potatoes for 10 minutes.
  • Brush a large oven tray with olive oil.
  • Spread the boiled potatoes on the tray. Season with black pepper.
  • Roast the potatoes for 30 minutes.
  • In a small bowl, mix ½ cup of olive oil with rosemary, garlic, zaatar, vinegar and a pinch of salt. Mix to combine.
  • Remove the potatoes tray from the oven. Spread the olive oil mixture all over the potatoes.
  • Roast again for 30-40 minutes.
