Roasted Chicken with Vegetables


1 lemon, sliced

2 stalks green onion, chopped

1 whole chicken, 2 kg

2 bay leaves

Salt and pepper

1 cup Serjella Extra Virgin Olive Oil

2 carrots, chopped

2 potatoes, chopped

1 onion, cut into rings

4 garlic cloves

6-8 asparagus sticks


  • Preheat oven at 200°C.
  • Rinse the chicken under cool water and then pat it dry with paper towels.
  • Place the chicken in an oven tray and then stuff it with lemon, green onion, and bay leaves.
  • Season chicken with salt and pepper.
  • Pour the olive oil all over the chicken. Rub it completely.
  • Cover the tray with foil. Roast it for one hour and a half.
  • Remove the chicken from oven. Spread the chopped vegetables in the same tray around the chicken.
  • Roast it again for 45 minutes. Serve.
