
Fusilli alla Caprese
Ingredients
2 tbsp Serjella Extra Virgin Olive Oil
500 g fusilli pasta
¼ cup Serjella Extra Virgin Olive Oil
2 garlic cloves, minced
3 cups chopped cherry tomatoes
Salt and pepper
1 cup fresh basil
1 cup mozzarella cheese cubes
¼ cup lemon juice
Preparation
- Add the pasta to a pot of boiling water. Add 2 tablespoons of olive oil and 1 teaspoon of salt. Cook the pasta according to pack instructions.
- Drain the pasta from water and set it aside.
- Heat ¼ cup of olive oil in a sauce pan on medium heat.
- Add the garlic and cherry tomatoes. Season with salt and pepper.
- Cook for 4 minutes until the tomatoes are squashy. Smash them with a fork.
- Add the cooked pasta in a big bowl. Add the tomato mixture and mix to combine.
- Add fresh basil and mozzarella cheese. Mix to combine. Serve.
