
Quinoa Tabouleh
Ingredients
¼ cup Serjella Extra Virgin Olive Oil
¼ cup lemon juice
1 tsp salt
1 tsp ground sumac
1 cup quinoa, rinsed
1 cup chopped parsley
2 tomatoes
2 green onions
1 cup fresh mint
Directions
- In a small bowl, mix the olive oil with lemon juice, ground sumac and salt. Whisk well.
- Add the quinoa to a pot with 2 cups of water. Bring to a boil. Turn down the heat, cover the pot and cook for 15 minutes. Remove from heat and let stand for 5 minutes.
- Chop the tomatoes, parsley, green onion, and fresh mint. Mix them all in a big bowl.
- Add the cooked quinoa. Pour the dressing on top. Mix to combine.
