
Pasta Salad
Ingredients
1 cup red vinegar
¼ cup lemon juice
1 tsp oregano powder
1 tsp minced garlic
1 tsp mustard
Salt and pepper
¼ cup Serjella Extra Virgin Olive Oil
200 g penne pasta
1 red bell pepper
1 yellow bell pepper
1 red onion
½ cup cherry tomato halves
½ cup black olive slices
Preparation
- Cook the pasta according to the pack instructions. Drain from the water and set aside.
- In a medium bowl, mix red vinegar with lemon juice, oregano, garlic, mustard and olive oil. Whisk to combine.
- Season with salt and pepper.
- Cut tomato to half.
- Slice the onions and bell peppers.
- In a large bowl, mix all vegetables with cooked pasta and black olives.
- Pour dressing over the mixture and mix to combine.
