Corn & Avocado Salad


¼ cup Serjella Extra Virgin Olive Oil

2 tbsp lemon juice

1 avocado

4-6 cherry tomatoes

1 cup sweet corn

½ cup green onions, chopped

½ cup fresh coriander, chopped

Salt and pepper


  • Mix the olive oil in a small bowl with lemon juice.
  • Season with salt and pepper. Whisk to combine.
  • Cut avocado to cubes.
  • Cut cherry tomatoes into halves.
  • Mix all vegetables together in a big bowl.
  • Pour dressing over and mix to combine.
