
Corn & Avocado Salad
Ingredients
¼ cup Serjella Extra Virgin Olive Oil
2 tbsp lemon juice
1 avocado
4-6 cherry tomatoes
1 cup sweet corn
½ cup green onions, chopped
½ cup fresh coriander, chopped
Salt and pepper
Preparation
- Mix the olive oil in a small bowl with lemon juice.
- Season with salt and pepper. Whisk to combine.
- Cut avocado to cubes.
- Cut cherry tomatoes into halves.
- Mix all vegetables together in a big bowl.
- Pour dressing over and mix to combine.
