Grilled Halloumi Bruschetta


4 tbsp Serjella Extra Virgin Olive Oil

Halloumi cheese

French baguette

1 tomato, diced

1 onion, finely chopped

2 cloves garlic, minced

Fresh basil, finely chopped


  • Preheat oven to 200°C.
  • Brush a grill pan with olive oil and grill the halloumi cheese slices for two minutes on both sides.
  • Cut baguette bread to slices. Brush one side of each slice with olive oil.
  • Toast for 2 minutes or until golden and crispy.
  • In a bowl, mix the tomato with onion and garlic.
  • Add 2 tablespoons of olive oil and mix to combine.
  • Add fresh chopped basil and mix well.
  • Put one piece of grilled halloumi on one slice of toasted bread.
  • Top with one tablespoon of the tomato mixture.
