INGREDIENTS

4 eggs
1 onion, chopped
4 tomatoes, chopped
2 chopped green peppers
2 tablespoons of extra virgin olive oil
Salt and pepper

PREPERATION

•  Heat the olive oil in a saucepan over medium heat.

•  Then fry the onions for two minutes, until soft.

•  Add green pepper and tomato, salt and pepper and stir well.

•  Then cover the pan until the vegetables are cooked for 5-6 minutes or until they are soft.

•  Add eggs and cook until soft, then it’s ready to serve.
