Corn and Avocado Salad

INGREDIENTS
1/4 cup of extra virgin olive oil
2 tablespoons of lemon juice
1 avocado
4-6 cherry tomatoes
1 cup sweet corn
1/2 cup chopped green onions
1/2 cup chopped fresh coriander
Salt and pepper
PREPERATION
• Mix the olive oil in a small bowl with lemon juice, salt and pepper well.
• Cut the avocado into cubes and cherry tomatoes in half.
• Mix all the vegetables together in a large bowl
• Put the olive oil mixture on top of them and mix all well and then it’s ready to serve.
