TOMATO AND APRICOT SALAD

INGREDIENTS

4 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
1 teaspoon lemon juice
1/2 cup chopped tomatoes
1 cup chopped cucumber
1 cup dried apricots
1 cup pistachios
1/2 cup spinach
Salt and pepper

PREPERATION

•  Mix olive oil in a small bowl with balsamic vinegar and lemon juice well

•  Add the Salt and black pepper.

•  Then pour the mixture into the tarantula

•  Add the tomatoes first, then the cucumber, dried apricots, pistachios and finally spinach,

•  Close the jar tightly and place in the fridge.
